In this introductory session, I take you behind the course to explain why it was created. I introduce you to nutrigenomics and culinary genomics. You go on a brief journey to Restaurant AGA in Northern Italy to learn about how Chef Oliver Piras is creating culinary medicine on the menu. You also journey to the "Blue Zones" in the Mediterranean to see how genes interact with specific food, potentially explaining longevity in this region. I also discuss the role of connectivity in human health through the lens of Human Social Genomics.
